Seared Tuna Steak Serves 4 4 (6 oz) Ahí tuna steaks, cut saku style Kosher salt High heat cooking oil 1. Place a stainelss Steel or cast iron pan over high heat and let preheat for a few minutes until very hot. Add a thin layer of oil; when oil is hot and just about to smoke, carefully add tuna (cook in batched as needed, do not overcrowd pan). Cook until browned on both sides, about 45 – 90 seconds per side. Do not cook longer if you wish to keep the inside rare. Avocado Salad Serves 4 3 - 4 Hass ripe avocados, large dice 1 bunch baby arugula or watercress Herby Caper Dressing 1 bunch Italian parsley, leaves and tender stems 1 bunch basil, leaves only 1 shallot or 3 scallions 1 clove garlic 1 small hot chile, optional 1 tbsp capers, rinsed 1 tsp Dijon Kosher salt, freshly grated black pepper, red pepper flakes 3 tbsp red or white wine vinegar 4 - 6 tbsp good quality olive oil 1. Finely mince parsley, basil, shallot or scallion, garlic, chile, and capers; alternatively, use a food processor to chop (be sure to pulse machine, do not puree). Add dijon, fresh pepper, red pepper flakes, and vinegar and mix well; let sit 5 minutes. 2. Slowly add olive oil, whisking vigorously to emulsify; start with 4 tbsp and continue to add until the fat and acid are balanced but the dressing is still a bit tart (keep in mind that the avocados will mellow some of the tartness). Add small pinches of salt as desired, tasting in between (capers will bring a good amount of salt to the dressing). 3. Dress the greens lightly, with just a spoonful or two of the dressing; spread over platter or shallow bowls. Use remainder of dressing to dress avocados, tossing lightly as to not mash them; spoon over greens. Enjoy immediately. More Info below.
